Traceability


 





A new European Law (EG 178/2002), often determined as the "General Food Law", aims to increase the general food safety. This regulation stipulates that the origin of the products and the ingredients should be traceable. This way, when a soiled product is found, the original cause can be determined easily and quickly.

La Lorraine Bakery Group controls the traceability by different ways:

  • We can trace who did deliver which ingredient and on what day.
  • A specific procedure ensures that the quality department can trace all the ingredients, semi-manufactured articles and finished products in all stages of production, treatment and distribution.
  • All wrapped products are labelled with a code which shows
    - The production group in which it was made,
    - The production day
    - And the production line.
  • We also database who and when we delivered all our products.
