Quality control takes place during all stages from the first entry of the ingredients in the company till products who are leaving the company towards you.
All receipt ingredients are controlled. In addition, La Lorraine only uses high quality ingredients, from approved and often-visited suppliers. Some examples:
We use iodide salt,
Our matts (for the regional speciality pie) are original matts from Geraardsbergen,
We only use real butter, ...
During the production period samples are taken. Different parameters such as weight, measures, visual aspect are checked and registered in process- and product parameters. With these controls we check whether these products are conform the set standards. When products does not apply to these standards, the production process can still be adapted.
After the production, other quality controls are set in place for frozen products and products packaged under protective atmosphere.
For frozen products we take 2 samples per pallet for extra controls on weight, measures and visual aspect before and after the baking process. After the bake another control is made on crustiness, the colour and the crumb, ...
For the ambient stable products a similar control is done for the weight, measures and visual aspect of the product, followed by a control for leaks in the wrapping.
In case the products are not conform, the products are blocked till the new sampling is executed.
A last and final control takes place before the release of the products. After production, all the goods are blocked in the depot and are only released by the quality department.
